1.25 lbs sirloin steak, cut into 1-inch cubes
1.5 cups Yukon Gold potatoes, peeled and cut into 1/2-inch cubes
1 small zucchini, cut into bite-size pieces
1/2 red bell pepper, diced
1/2 yellow bell pepper, diced
1 medium yellow onion, diced
2 cloves garlic, minced
1 small jalapeño, finely diced, seeds removed
2 tablespoons Worcestershire sauce
1 tablespoon tomato paste
2 tablespoons olive oil, divided
1 teaspoon smoked paprika
1/2 teaspoon chipotle powder
1 teaspoon kosher salt, divided
1/2 teaspoon freshly ground black pepper
1/4 cup fresh cilantro, chopped
Lime wedges, for serving
Instructions
Preheat the Blackstone griddle to medium-high heat, about 375–400°F.
Boil the diced potatoes in salted water for 5 minutes. Drain and pat them completely dry.
Pat the steak cubes dry and season them with half of the salt and the black pepper.
Add 1 tablespoon olive oil to the griddle. Arrange the steak in a single layer and sear for about 2 minutes. Turn and cook for another 1–2 minutes, then move it to the cooler side of the griddle or transfer it to a clean plate.
Add the remaining olive oil, onion, and bell peppers. Cook for 3 minutes.
Add the zucchini and jalapeño and cook for another 2–3 minutes. Add the garlic during the final 30 seconds.
Move the vegetables aside. Add the parboiled potatoes in a single layer and cook undisturbed for 3–4 minutes. Flip and cook until golden and crisp.
Season the potatoes with smoked paprika, chipotle powder, and the remaining salt.
Mix the Worcestershire sauce, tomato paste, and 1 tablespoon water. Pour the mixture over the vegetables and potatoes and toss to coat.
Return the steak and its juices to the griddle. Toss everything together and cook for 1–2 minutes, until the steak reaches your preferred doneness.
Garnish with fresh cilantro and serve immediately with lime wedges.
Notes
For added flavor, marinate the steak prior to cooking. Ensure potatoes are well-dried for crispiness.
