Potato and Ham Soup

A comforting and hearty potato and ham soup that warms you up on cold days. Easy to make and perfect for using leftover ham.

Ingredients

  • 2 cups diced ham
  • 4 cups diced potatoes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional: chopped parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
  2. Add the diced ham and cook for an additional 5 minutes.
  3. Stir in the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  4. Stir in the heavy cream and season with salt and pepper.
  5. Simmer for another 5 minutes, then serve hot, garnished with chopped parsley if desired.

Notes

For extra flavor, add herbs like thyme or rosemary. Adjust thickness by adding more or less broth or cream. You can include carrots or celery for added vegetables.
