A delicious and easy one pot dish that combines the flavors of tacos with pasta for a comforting meal, ready in just 30 minutes.

Ingredients

  • 8 oz pasta
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can diced tomatoes (14 oz)
  • 1 cup corn (frozen or canned)
  • 2 cups chicken or vegetable broth
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • Chopped cilantro (for garnish, optional)

Instructions

  1. Brown the ground beef or turkey over medium heat in a large pot. Drain excess fat.
  2. Add the taco seasoning and mix well.
  3. Stir in the diced tomatoes, corn, broth, and pasta. Bring to a boil.
  4. Reduce heat, cover, and simmer for about 15-20 minutes or until the pasta is cooked.
  5. Remove from heat and stir in the cheese until melted.
  6. Season with salt and pepper to taste. Garnish with chopped cilantro if desired, and serve warm.

Notes

You can add a toppings bar for customization with sour cream, jalapeños, or avocado slices.
