Delicious and wholesome gingersnaps made with gluten-free ingredients and coconut sugar.

Ingredients

  • 1 1/2 cups gluten-free flour blend
  • 1/2 cup coconut sugar
  • 1/4 cup molasses
  • 1/4 cup unsweetened applesauce
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/4 tsp salt
  • 1/4 cup coconut oil (melted)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine gluten-free flour, coconut sugar, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, mix the molasses, applesauce, and melted coconut oil.
  4. Gradually add the wet mixture to the dry ingredients and mix until well combined.
  5. Form the dough into small balls and place on the baking sheet.
  6. Bake for 10-12 minutes, or until edges are firm.
  7. Allow to cool on a wire rack before serving.

Notes

For an extra chewy cookie, do not overbake. Letting the dough rest for about 30 minutes before baking can help the flavors meld.
