  • 1 pound chicken breast, diced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, chopped
  • 1/2 cup olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Stir in minced garlic and cook for an additional minute.
  4. Add chicken broth and bring to a boil.
  5. Stir in orzo pasta and reduce heat to a simmer.
  6. Cook for about 10-12 minutes, or until the orzo is cooked al dente, adding more broth if necessary.
  7. Mix in cherry tomatoes, spinach, olives, and oregano.
  8. Cook until spinach is wilted, about 2-3 minutes.
  9. Season with salt and pepper to taste.
  10. Serve topped with crumbled feta cheese.

Notes

For a richer flavor, marinate chicken in olive oil, garlic, and oregano before cooking. Adjust vegetables to your liking.
