A one-pan dinner that combines the classic tastes of tacos with the comfort of cheesy rice, perfect for busy weeknights.

Ingredients

  • 1 lb ground beef (85/15 lean)
  • 1 cup diced yellow onion
  • 2 cloves garlic (minced)
  • 1 cup long-grain white rice (uncooked)
  • 1 oz taco seasoning (1 packet)
  • 2.5 cups beef broth
  • 1 cup salsa (your favorite kind)
  • 2 cups shredded cheese blend (Cheddar and Monterey Jack)
  • Optional toppings: sour cream, cilantro, jalapeños

Instructions

  1. Cook the ground beef and onion in a large skillet over medium-high heat until browned. Drain excess grease.
  2. Stir in the minced garlic and cook for 1 minute.
  3. Add the uncooked rice and taco seasoning, stirring to toast the rice for 1 minute.
  4. Pour in the beef broth and salsa. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender.
  5. Remove from heat. Sprinkle the cheese over the top, cover the skillet, and let it stand for 2-3 minutes until the cheese is fully melted.
  6. Garnish with your favorite toppings and serve immediately.

Notes

Use lean ground beef to reduce excess grease, or substitute with ground turkey or chicken for a lighter option. Add more salsa or diced green chilies for extra spice.
