Thick and chewy brownie mix cookies bursting with chocolate flavor, perfect for any occasion.

  • 1 box dark chocolate fudge brownie mix (18.3 oz / 518g)
  • 1/4 cup all-purpose flour (30g)
  • 1/4 cup vegetable oil (60ml)
  • 2 large eggs (100g, room temperature)
  • 1 cup semi-sweet chocolate chips (170g)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the brownie mix and all-purpose flour in a large bowl. Mix them well until evenly combined.
  3. Add the vegetable oil and eggs to the dry mix. Stir everything together until you get a thick dough.
  4. Fold in the semi-sweet chocolate chips until they are evenly distributed in the dough.
  5. Use a spoon or cookie scoop to drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake in the preheated oven for 10-12 minutes or until the edges look set, but the centers still look soft.
  7. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For best results, use room temperature eggs and avoid overmixing the dough. Can add nuts or different chocolate types for variety.
