4 cod fillets (6 oz each)
1 tbsp olive oil
2 cloves garlic (minced)
1/2 tsp salt
1/4 tsp black pepper
1/2 cup plain Greek yogurt
2 tbsp fresh dill (chopped)
1 tbsp lemon juice
1 tsp lemon zest
1 tsp Dijon mustard
Instructions
Preheat your oven to 400°F (200°C). Pat the cod fillets dry with a paper towel and place them in a baking dish.
Drizzle the cod fillets with olive oil, then sprinkle with minced garlic, salt, and pepper. Gently rub to coat the fillets evenly.
Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork. The cooking time will vary based on the thickness of your fillets.
While the cod is baking, prepare the sauce. In a small bowl, combine the Greek yogurt, chopped dill, lemon juice, lemon zest, and Dijon mustard. Stir until everything is well combined. Season with salt and pepper to taste.
Serve the baked cod immediately, topped with a generous spoonful of the fresh lemon-dill sauce.
