A fun twist on the classic walking taco, this casserole combines seasoned ground beef, black beans, and crispy tortilla chips topped with melty cheese and fresh toppings, making it a perfect dish for busy weeknights.

Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 2 cups tortilla chips
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream
  • 1 taco seasoning packet
  • 2 green onions, chopped
  • 1 cup lettuce, shredded
  • 1 tomato, diced
  • 1 avocado, sliced

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ground beef in a skillet over medium heat until browned; drain excess fat.
  3. Stir in the taco seasoning and black beans; cook until heated through.
  4. Layer half of the tortilla chips, followed by half of the beef mixture, and half of the cheese in a baking dish. Repeat layers.
  5. Bake for 15-20 minutes until cheese is melted and bubbly.
  6. Remove from oven and top with sour cream, green onions, lettuce, tomatoes, and avocado.
  7. Serve warm and enjoy!

Notes

For extra flavor, try adding fresh garlic and onion to the beef. Customize the toppings to suit your taste.
