2 large Chicken Breasts (Boneless and skinless)
1 cup (240ml) Buttermilk
1.5 cups (180g) All-Purpose Flour
0.5 cup (60g) Cornstarch (For extra crunch)
1 tsp (5g) Smoked Paprika
0.5 tsp (2g) Cayenne Pepper (Adjust for heat)
4 slices Brioche Bread (1-inch thick slices)
3 large Eggs
0.5 cup (120ml) Heavy Cream
0.25 cup (60ml) Maple Syrup (Translucent amber grade)
1 tbsp (8g) Powdered Sugar (For dusting)
Instructions
Prepare the Fried Chicken: Marinate the chicken breasts in buttermilk for at least an hour. Mix flour, cornstarch, smoked paprika, and cayenne pepper. Coat the chicken in the flour mixture and fry in hot oil until crispy and golden brown. Drain on paper towels.
Prepare the French Toast: Whisk together eggs, heavy cream, and maple syrup in a bowl. Heat a non-stick skillet over medium heat. Dip each slice of brioche bread into the egg mixture and cook until golden brown on both sides.
Assembly: Place a piece of fried chicken on one slice of the French toast. Add another slice to create a sandwich. Dust with powdered sugar before serving.
