A warm and hearty dish featuring colorful bell peppers stuffed with a savory taco filling, perfect for family dinners.

  • 4 bell peppers
  • 1 cup cooked rice
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheese
  • Sour cream and salsa for serving (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the ground beef or turkey over medium heat until browned.
  4. Add taco seasoning, cooked rice, black beans, and corn to the skillet. Mix until well combined.
  5. Stuff each bell pepper with the taco filling mixture.
  6. Place the stuffed peppers in a baking dish and top with shredded cheese.
  7. Cover the dish with foil and bake for 25-30 minutes.
  8. Remove the foil and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.
  9. Serve warm with sour cream and salsa if desired.

Notes

Leftover stuffed peppers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven before serving.
