1 lb ground beef (80/20 or 90/10 lean)
1/2 cup beef broth
2 tbsp taco seasoning
1 cup cheddar cheese (freshly shredded)
1/2 cup sour cream
1 tsp lime juice
4 large flour tortillas (10-inch size)
2 medium Roma tomatoes (seeded and finely diced)
1 tbsp cilantro (finely chopped)
Instructions
Prepare the beef filling: In a skillet, brown the ground beef over medium heat. Drain excess fat. Stir in the beef broth and taco seasoning. Cook until well combined and heated through. Remove from heat.
Assemble the burritos: In a large bowl, mix the beef filling with cheddar cheese, sour cream, and lime juice. Spoon the mixture onto each tortilla. Add diced tomatoes and cilantro, then fold the tortillas tightly.
Toast the burritos: Heat a skillet over medium heat. Place the burritos seam-side down in the skillet. Cook until golden and crispy, about 3-4 minutes per side.
