1 lb chicken breast, diced
1 tsp chili powder
1 tsp cumin
Salt and pepper to taste
1 cup quinoa or brown rice
1 can black beans, rinsed and drained
1 cup corn (fresh or frozen)
1 cup cherry tomatoes, halved
1 avocado, diced
Lettuce or spinach
Taco sauce or salsa
Lime wedges for serving
Instructions
Cook the quinoa or brown rice according to package instructions and set aside.
In a skillet over medium heat, add the diced chicken and season with chili powder, cumin, salt, and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes.
In bowls, layer the cooked quinoa or rice, followed by the chicken, black beans, corn, cherry tomatoes, avocado, and lettuce or spinach.
