A delicious and easy slow cooker roast beef with a rich balsamic glaze that requires minimal effort, perfect for any occasion.

  • 34 lb beef chuck roast
  • 2 tablespoons olive oil
  • 1 large yellow onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth (low-sodium)
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 1/2 cup balsamic vinegar
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water

Instructions

  1. Pat the chuck roast dry and season it well with salt and pepper on all sides.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the roast for 3-4 minutes on each side until it has a deep brown crust. Transfer the roast to your slow cooker.
  3. Add the sliced onion to the same skillet and cook for 5-7 minutes until softened. Then add the minced garlic and cook for another minute until fragrant.
  4. Pour in the beef broth to deglaze the pan, scraping up any browned bits from the bottom. Stir in the soy sauce, Worcestershire sauce, dried thyme, and rosemary. Bring to a simmer.
  5. Cover the beef in the slow cooker with the broth mixture. Cook on low for 8-10 hours or on high for 4-5 hours, until the beef is tender.
  6. Remove the roast from the slow cooker. Strain the cooking liquid into a medium saucepan.
  7. Whisk together the cornstarch and cold water to make a slurry. Bring the liquid in the saucepan to a simmer.
  8. Add the cornstarch slurry, balsamic vinegar, and honey to the simmering liquid. Continue to simmer for 5-8 minutes until the glaze thickens.
  9. Shred or slice the beef and drizzle it generously with the warm balsamic glaze before serving.

Notes

Sear the beef well for better flavor and feel free to adjust spices to taste. Adding vegetables like carrots and potatoes can create a complete meal.
