8 large squid (calamari)
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1/4 cup fresh parsley, chopped
2 cloves garlic, minced
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup diced tomatoes
1/4 cup tomato aioli
Olive oil for grilling
Instructions
Preheat the grill to medium heat.
Combine breadcrumbs, Parmesan cheese, parsley, garlic, red pepper flakes, salt, and black pepper in a bowl.
Clean the squid, removing the beak and cartilage, and stuff each squid with the breadcrumb mixture.
Secure the open ends with toothpicks.
Brush the stuffed squid with olive oil.
Grill the squid for about 3-4 minutes on each side until tender and cooked through.
Serve over a bed of diced tomatoes and drizzle with tomato aioli.
