A nutritious and delicious meal packed with protein, perfect for a post-workout snack or a hearty dinner.

  • 2 large sweet potatoes
  • 1 pound ground turkey
  • 1 can black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 teaspoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Chopped green onions or cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Poke sweet potatoes with a fork and bake in the oven for about 45 minutes, or until tender.
  3. Heat olive oil in a skillet over medium heat. Add chopped onion and garlic, and sauté until softened.
  4. Add ground turkey to the skillet and cook until browned. Stir in black beans, cumin, chili powder, salt, and pepper.
  5. Once sweet potatoes are cooked, let them cool slightly. Then slice them in half lengthwise and scoop out a small portion of the flesh.
  6. Fill each sweet potato half with the turkey and black bean mixture. Top with shredded cheese.
  7. Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  8. Garnish with chopped green onions or cilantro if desired. Serve warm and enjoy!

Notes

These sweet potato boats are versatile and can be served as a main dish or side. Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 3 months.
