2 cups pecan halves
1 cup brown sugar
1/2 cup unsalted butter
1/4 cup corn syrup
1 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
Preheat your oven to 350°F (175°C) and spread the pecan halves on a baking sheet. Toast in the oven for about 10 minutes or until fragrant.
In a saucepan over medium heat, combine brown sugar, butter, corn syrup, and salt. Bring to a boil and stir constantly for about 4-5 minutes until the mixture thickens.
Remove the saucepan from heat and stir in the vanilla extract.
Pour the caramel mixture over the toasted pecans and mix well to coat.
Spread the mixture back onto the baking sheet lined with parchment paper.
Bake for an additional 10-15 minutes, stirring occasionally, until the mixture is bubbly and golden.
Remove from oven and let cool completely before breaking into pieces.
