A nutritious and delicious peanut chicken bowl filled with grilled chicken, sweet potatoes, and creamy peanut dressing.

Ingredients

  • 1 lb chicken breast
  • 2 medium sweet potatoes, cubed
  • 1 cup quinoa, cooked
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic, minced
  • Salt and pepper, to taste
  • Chopped green onions, for garnish
  • Chopped peanuts, for garnish

Instructions

  1. Start by cooking the quinoa according to package instructions. Set aside.
  2. In a large skillet, heat sesame oil over medium heat. Add cubed sweet potatoes and cook until tender, about 10-15 minutes.
  3. While the sweet potatoes are cooking, grill or sauté the chicken breast until fully cooked (about 6-7 minutes per side). Let it rest before slicing.
  4. In a bowl, mix peanut butter, soy sauce, honey, minced garlic, salt, and pepper to create the peanut dressing.
  5. To assemble the bowls, divide cooked quinoa, sweet potatoes, and sliced chicken into bowls. Drizzle with the creamy peanut dressing.
  6. Garnish with chopped green onions and peanuts. Serve immediately or store for meal prep.
