Ingredients

Scale
  • 1 cup active sourdough starter (bubbly and fed 46 hours prior)
  • 4 cups all-purpose flour
  • 1 cup whole milk (lukewarm)
  • 1/2 cup granulated sugar
  • 1/3 cup unsalted butter (melted)
  • 1 large egg (room temperature)
  • 1 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 1 cup brown sugar (packed)
  • 2 tbsp ground cinnamon
  • 4 oz cream cheese (softened)
  • 1/4 cup unsalted butter (softened)
  • 1 1/2 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp milk (or cream, as needed)

Instructions

  1. In a large bowl, combine the active sourdough starter, lukewarm milk, melted butter, granulated sugar, room temperature egg, and salt. Mix well.
  2. Gradually add the all-purpose flour, stirring until a soft dough forms. Knead the dough for about 5-10 minutes until smooth and elastic.
  3. Place the dough in a greased bowl, cover it with plastic wrap, and let it rise at room temperature for 4-6 hours, or until doubled in size.
  4. Once the dough has risen, roll it out on a lightly floured surface into a large rectangle.
  5. Spread the softened butter on the dough, then sprinkle the brown sugar and ground cinnamon evenly over the top.
  6. Starting from the long edge, roll the dough tightly into a log. Cut the log into 12 equal pieces.
  7. Place the rolls in a greased baking dish, cover with plastic wrap, and refrigerate overnight.
  8. Preheat your oven to 350°F (175°C).
  9. Remove the rolls from the refrigerator and let them sit at room temperature for 30-60 minutes while the oven heats up.
  10. Bake the cinnamon rolls in the preheated oven for 25-30 minutes, or until golden brown.
  11. While the rolls are baking, prepare the frosting by mixing the softened cream cheese, softened butter, powdered sugar, vanilla extract, and milk until smooth.
  12. Once the rolls are done baking, spread the frosting over the warm rolls and enjoy!

Notes

Serve warm with cream cheese frosting, great with coffee or tea. Store leftovers in an airtight container at room temperature for up to 2 days.
