A classic Oven-Baked Pot Roast recipe that results in a tender, savory dish perfect for family dinners.

Ingredients

Scale
  • 3–4 lbs beef chuck roast
  • 4 cups beef broth
  • 4 large carrots, chopped
  • 4 large potatoes, chopped
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Season the beef roast with salt and pepper.
  3. In a large Dutch oven, heat the olive oil over medium-high heat.
  4. Sear the roast on all sides until browned.
  5. Remove the roast and set aside.
  6. In the same pot, add the onion and garlic, and sauté until fragrant.
  7. Return the beef to the pot, add beef broth, carrots, potatoes, thyme, and rosemary.
  8. Cover with a lid and transfer to the oven.
  9. Bake for 3-4 hours, or until the beef is tender.
  10. Remove from the oven and let it rest before slicing. Serve hot with the vegetables.

Notes

For a deeper flavor, consider adding a splash of wine to the broth before baking. Let the pot roast rest for about 15 minutes after taking it out of the oven to retain moisture when slicing.
