A delightful and easy one pan meal that brings together all your favorite taco flavors, perfect for busy weeknights.

Ingredients

  • 1 lb ground beef
  • 1 cup bell peppers, diced
  • 1 cup onion, diced
  • 1 cup corn, frozen or canned
  • 1 cup black beans, drained and rinsed
  • 1 cup rice (white or brown)
  • 2 cups beef broth or water
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Add the diced onions and bell peppers, cooking until softened.
  3. Stir in the taco seasoning, corn, black beans, and rice, mixing well.
  4. Pour in the beef broth or water, bringing the mixture to a boil.
  5. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is fully cooked and liquid is absorbed.
  6. Stir in the cheese until melted and combined.
  7. Season with salt and pepper to taste before serving.

Notes

Serve warm, garnished with fresh cilantro, avocado slices, or sour cream. Leftovers can be stored in an airtight container for up to 3 days.
