A quick and satisfying family dinner featuring roasted potatoes topped with savory ground beef and fresh toppings.

  • 4 large potatoes
  • 1 lb ground beef
  • 1 cup cheddar cheese, shredded
  • 1 avocado, diced
  • 1 cup sweet corn (canned or frozen)
  • 1 cup pico de gallo
  • 1/2 cup sour cream or crema (for drizzle)
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and cube the potatoes, then toss them in olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes, until crispy and golden.
  3. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat, then stir in taco seasoning and a little water. Simmer for a few minutes.
  4. Once the potatoes are done, assemble the bowls by adding a layer of roasted potatoes, then ground beef, followed by cheddar cheese, avocado, sweet corn, and pico de gallo.
  5. Drizzle with sour cream or crema.
  6. Serve immediately and enjoy your hearty meal!

Notes

Feel free to adjust the seasoning and toppings according to your taste. For an extra crispy texture, flip the potatoes halfway through roasting.
