Loaded Potato Soup

A comforting and creamy Loaded Potato Soup that warms you up with delicious flavors of loaded baked potatoes.

Ingredients

  • 4 large potatoes, peeled and diced
  • 6 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup cooked bacon, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Chives or green onions for garnish

Instructions

  1. Sauté the onions and garlic over medium heat until translucent.
  2. Add the diced potatoes and broth to the pot, bringing it to a boil.
  3. Reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
  4. Mash some of the potatoes in the pot for a thicker consistency, if desired.
  5. Stir in the heavy cream and cheese, mixing until the cheese is melted.
  6. Add in the chopped bacon, and season with salt and pepper to taste.
  7. Serve hot, garnished with chives or green onions.

Notes

For added creaminess, blend the soup until smooth. Can be made vegetarian by using vegetable broth and omitting bacon.
