  • 4 medium potatoes, diced
  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1 avocado, sliced
  • Sour cream
  • Fresh cilantro for garnish
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced potatoes in olive oil, salt, and pepper, then spread them on a baking sheet. Roast in the oven for 25-30 minutes or until crispy and golden.
  3. In a skillet over medium heat, cook the ground beef until browned. Add the taco seasoning and cook according to package instructions.
  4. Once the potatoes are done, assemble the bowls by layering roasted potatoes, ground beef, black beans, corn, and diced tomatoes.
