A delightful dish featuring juicy chicken breasts coated in a tangy lemon and garlic butter sauce, perfect for any occasion.

  • 4 large Chicken Breasts (Boneless and skinless)
  • 2 tbsp Avocado Oil (Or light olive oil)
  • 1 tsp Kosher Salt (To taste)
  • 1 tsp Cracked Black Pepper (Coarsely ground)
  • 4 tbsp Unsalted Butter (Cold, cubed)
  • 3 tbsp Fresh Garlic (Finely minced)
  • 1/2 cup Chicken Broth (Low-sodium)
  • 1 large Lemon (Juiced)
  • 1 large Lemon (Sliced into rounds)
  • 1/4 cup Fresh Parsley (Finely chopped)
  • 6 sprigs Fresh Thyme (Whole sprigs)

Instructions

  1. Start by seasoning both sides of the chicken breasts with kosher salt and cracked black pepper.
  2. Heat the avocado oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and sear them for about 5-7 minutes on each side.
  3. Transfer the chicken to a plate and cover with aluminum foil to keep warm.
  4. Add cold, cubed unsalted butter to the skillet and melt before adding minced garlic. Sauté for 1 minute.
  5. Pour in the chicken broth and lemon juice, stirring well to combine.
  6. Add the lemon rounds and fresh thyme to the sauce and let it simmer for a couple of minutes.
  7. Return the chicken to the skillet, spooning the sauce over it, and cook for another minute.

Notes

For extra flavor, consider marinating the chicken with lemon juice, garlic, and herbs before cooking.
