A nutritious and flavorful meal featuring stuffed bell peppers packed with protein from lean ground beef, perfect for busy weeknights.

Ingredients

  • 4 bell peppers
  • 1 pound lean ground beef
  • 1 cup cooked brown rice
  • 1 cup diced tomatoes
  • 1 cup chopped onion
  • 1 cup corn (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the ground beef and onion until the beef is browned.
  4. Stir in the cooked brown rice, diced tomatoes, corn, garlic powder, onion powder, salt, and pepper.
  5. Fill each bell pepper with the beef mixture and place them in a baking dish.
  6. If desired, sprinkle shredded cheese on top of the stuffed peppers.
  7. Cover the dish with foil and bake for 25-30 minutes, then remove the foil and bake for an additional 10-15 minutes, until the peppers are tender.
  8. Serve warm and enjoy!

Notes

Stuffed peppers can be served with a salad or crusty bread. Leftovers can be stored in an airtight container and will stay fresh for 3-4 days.
