Ingredients

1 lb boneless, skinless chicken breasts
1 can black beans, drained and rinsed
1 can corn, drained
1 can diced tomatoes
1 onion, chopped
2 cloves garlic, minced
4 cups chicken broth
1 tsp cumin
1 tsp chili powder
Salt and pepper to taste
Tortilla strips for serving
Chopped cilantro for garnish
Lime wedges for serving
Instructions
Combine all ingredients except for tortilla strips, cilantro, and lime wedges in a crockpot.
Ifusing the crockpot, cook on low for 360-480 minutes or high for 180-240 minutes. If using an instant pot, cook on high pressure for 10 minutes and then quick release.
Once the chicken is cooked, shred it in the soup.
Serve hot, topped with tortilla strips, cilantro, and a squeeze of lime.
Notes
For a thicker soup, blend a portion of it after cooking. Adjust spices for desired heat.
