High Protein Chicken Taco Soup

A delicious and hearty chicken taco soup loaded with protein, beans, and a spicy kick.

Ingredients

  • 1 lb chicken breast
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 packet taco seasoning
  • Salt and pepper to taste
  • Optional toppings: avocado, cilantro, lime, cheese

Instructions

  1. Combine the chicken breast, black beans, corn, diced tomatoes, onion, garlic, chicken broth, and taco seasoning in an instant pot, crock pot, or large pot on the stove.
  2. If using an instant pot, seal the lid and cook on high pressure for 10 minutes, then quick release. If using a crock pot, cook on low for 6-8 hours or high for 3-4 hours. For the stove, bring the mixture to a boil, then reduce heat and simmer for 20-30 minutes.
  3. Shred the chicken in the pot and mix everything together.
  4. Season with salt and pepper to taste.
  5. Serve hot with your favorite toppings like avocado, cilantro, lime, or cheese.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
