A warm and comforting chicken pot pie packed with protein and vegetables, perfect for family dinners or cozy evenings.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 cup chicken broth
  • 1/2 cup milk
  • 1/4 cup all-purpose flour
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Combine chicken broth, milk, and flour in a skillet over medium heat. Whisk until smooth and cook until thickened.
  3. Stir in the shredded chicken, mixed vegetables, onion powder, garlic powder, thyme, salt, and pepper.
  4. Pour the chicken mixture into a pie crust in a pie dish.
  5. Cover with another pie crust, sealing the edges and making small slits on top for steam to escape.
  6. Bake in the preheated oven for 30-35 minutes or until the crust is golden brown.
  7. Let it cool for a few minutes before serving.

Notes
