Healthy Taco Stuffed Peppers

A colorful and tasty meal packed with nutrients, combining classic taco flavors with crunchy bell peppers.

Ingredients

  • 4 bell peppers
  • 1 lb ground turkey or beef
  • 1 cup cooked rice
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet over medium heat, cook the ground turkey or beef until browned. Drain excess grease.
  4. Stir in the cooked rice, black beans, corn, and taco seasoning. Mix well and cook for another 5 minutes.
  5. Stuff the bell peppers with the taco mixture and place them upright in a baking dish.
  6. If using, sprinkle cheese on top of the stuffed peppers.
  7. Cover the baking dish with foil and bake for 25-30 minutes, until the peppers are tender.
  8. Garnish with fresh cilantro if desired and serve immediately.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze the peppers for up to 3 months.
