A comforting and nutritious chicken pot pie soup, packed with veggies and lean protein, perfect for any day.

Ingredients

  • 1 lb chicken breast, cubed
  • 2 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 2 cups potatoes, diced
  • 1 cup coconut milk (or other dairy-free alternative)
  • 2 tsp dried thyme
  • 2 tsp dried rosemary
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 2 tbsp cornstarch (optional, for thickening)
  • Fresh parsley for garnish

Instructions

  1. Set the Instant Pot to sauté mode and heat olive oil. Add onion, carrots, and celery; sauté until softened.
  2. Add cubed chicken and cook until lightly browned.
  3. Stir in diced potatoes, chicken broth, coconut milk, thyme, rosemary, salt, and pepper.
  4. Secure the lid of the Instant Pot and set it to high pressure for 10 minutes.
  5. If using a slow cooker, combine all ingredients and cook on low for 6-8 hours.
  6. After cooking, if you want to thicken the soup, mix cornstarch with a little water and stir into the soup, cooking on sauté until thickened.
  7. Garnish with fresh parsley and serve hot.

Notes

For a chunkier soup, cut vegetables into larger pieces and adjust seasonings to your taste.
