  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (frozen or fresh)
  • 1 cup shredded cheese (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the onion and garlic, sautéing until softened.
  3. Add the diced chicken and cook until browned.
  4. Stir in the sliced peppers, chili powder, cumin, paprika, salt, and pepper; cook until the peppers are tender.
  5. Mix in the diced tomatoes, black beans, and corn.
  6. Transfer the mixture to a casserole dish and sprinkle cheese on top if desired.
  7. Bake in the preheated oven for about 20-25 minutes, or until heated through and cheese is melted.
  8. Garnish with fresh cilantro before serving.

Notes

For added flavor, marinate the diced chicken in some lime juice and spices for 30 minutes before cooking. Make sure to chop all your vegetables and chicken to similar sizes for even cooking.
