A delightful dish combining bold Cajun spices, whole wheat pasta, and lean chicken for a nutritious meal perfect for busy weeknights.

  • 2 boneless, skinless chicken breasts
  • 8 oz whole wheat pasta
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 cup low-sodium chicken broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup reduced-fat cheese (like mozzarella or cheddar)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the whole wheat pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and bell peppers. Sauté until soft, about 5 minutes.
  3. Add garlic and Cajun seasoning to the skillet, stirring for another minute.
  4. Slice the chicken breasts into strips, add to the skillet, and cook until browned and cooked through, about 5-7 minutes.
  5. Pour in the chicken broth and diced tomatoes, bringing to a simmer.
  6. Stir in the cooked pasta and cheese until melted and well combined.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley.

Notes

For extra heat, consider adding a pinch of cayenne pepper or some sliced jalapeños to the skillet.
