A nutritious and quick meal featuring grilled shrimp, black beans, and colorful vegetables over cilantro-lime rice.

Ingredients

  • 1 lb large shrimp (peeled and deveined)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1.5 cups long-grain white rice (uncooked)
  • 1/2 cup cilantro (freshly chopped)
  • 2 tbsp lime juice (freshly squeezed)
  • 1 can (15 oz) black beans (rinsed and drained)
  • 1 cup corn (frozen, canned, or grilled)
  • 1 cup cherry tomatoes (halved)
  • 1 large avocado (diced)
  • 1/4 cup red onion (thinly sliced)

Instructions

  1. Cook rice according to package directions. Once done, fluff with a fork and mix in the chopped cilantro and lime juice. Set aside.
  2. Combine the shrimp, olive oil, minced garlic, smoked paprika, cumin, salt, and pepper in a medium bowl. Toss to coat and let marinate for at least 15 minutes.
  3. Preheat your grill or a grill pan to medium-high heat. Skewer the shrimp if desired.
  4. Grill shrimp for 2-3 minutes per side, until pink and opaque. Be careful not to overcook.
  5. Assemble the bowls by dividing the cilantro-lime rice among four bowls. Top with the grilled shrimp, black beans, corn, cherry tomatoes, avocado, and red onion. Serve immediately.

Notes

Serve with extra lime wedges on the side for added flavor. Store leftovers in an airtight container for up to 2 days.
