Delicious and healthy Greek Turkey Meatball Bowls featuring turkey meatballs, quinoa, fresh vegetables, and tzatziki sauce.

Ingredients

  • 1 pound ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup quinoa
  • 2 cups water or chicken broth
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, pitted and sliced
  • 1/2 cup tzatziki sauce

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the ground turkey, breadcrumbs, Parmesan cheese, egg, minced garlic, dried oregano, salt, and pepper in a bowl. Mix well and form into meatballs.
  3. Place the meatballs on a baking sheet and bake for 20-25 minutes or until cooked through.
  4. Rinse the quinoa under cold water, then combine with water or chicken broth in a pot. Bring to a boil, reduce heat, cover, and simmer for 15 minutes.
  5. Fluff the quinoa with a fork and set aside.
  6. Chop the cucumber, bell pepper, and tomatoes for the fresh vegetables.
  7. Assemble your bowls by placing quinoa in bowls, topping with meatballs, fresh veggies, tzatziki sauce, feta cheese, and olives.
  8. Serve warm and enjoy!

Notes

For added flavor, let the meatball mixture sit for about 15 minutes before forming the meatballs. You can substitute quinoa with cauliflower rice for a healthier option.
