A flavorful Greek Chicken Marinade that enhances the taste of chicken while keeping it juicy and tender, perfect for barbecues or family meals.

  • 1.5 lbs boneless, skinless chicken breasts or thighs (about 23 breasts)
  • 1/2 cup extra virgin olive oil
  • 1/3 cup fresh lemon juice (from about 2 lemons)
  • 1 tbsp red wine vinegar
  • 4 cloves garlic (minced)
  • 2 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper (freshly ground)

Instructions

  1. Prepare the Marinade: In a mixing bowl, combine olive oil, lemon juice, red wine vinegar, minced garlic, dried oregano, salt, and black pepper. Whisk them together until combined.
  2. Marinate the Chicken: Place the chicken in a large zip-top bag or bowl. Pour the marinade over the chicken, ensuring it’s well coated. Seal the bag or cover the bowl and refrigerate for at least 1 hour, or overnight for the best flavor.
  3. Cook the Chicken: Preheat your grill or oven. If grilling, cook the chicken over medium heat for about 6-7 minutes per side, or until fully cooked. If baking, arrange the chicken in a single layer on a baking sheet and bake at 400°F (200°C) for about 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

Notes

For extra flavor, try adding fresh herbs like parsley or thyme. If you prefer a spicy kick, add some red pepper flakes or diced jalapeños to the marinade.
