Ingredients

Scale
  • 1 lb ground elk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (28 oz) diced tomatoes
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Toppings: shredded cheese, sour cream, green onions
  • Cornbread, for serving

Instructions

  1. Brown the ground elk in a large pot over medium heat.
  2. Add the onion, garlic, and bell pepper, sautéing until soft.
  3. Stir in the chili powder, cumin, salt, and pepper.
  4. Add the kidney beans and diced tomatoes, mixing to combine.
  5. Bring to a simmer, cover, and cook for 30-45 minutes to allow flavors to meld.
  6. Serve hot with toppings and cornbread.

Notes

For a thicker chili, simmer uncovered for the last 10-15 minutes. Adjust spice level by adding more chili powder or jalapeños. Letting the chili rest enhances flavor.
