A quick and impressive dish featuring salmon fillets stuffed with a rich mixture of shrimp, spinach, and Parmesan cheese, perfect for any dinner table.

  • 4 salmon fillets
  • 1 cup cooked shrimp, peeled and deveined
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 lemon, juiced
  • 1/2 cup light Parmesan cheese
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
  3. Add spinach and cook until wilted.
  4. Stir in cooked shrimp and lemon juice.
  5. Remove from heat and mix in Parmesan cheese.
  6. Slice the salmon fillets to create a pocket.
  7. Stuff each salmon fillet with the shrimp and spinach mixture.
  8. Season with salt and pepper.
  9. Place the stuffed salmon in a baking dish and bake for 20-25 minutes or until the salmon is cooked through.
  10. Serve warm.

Notes

Best served right out of the oven. Pair with roasted vegetables or salad. Store leftovers in an airtight container for up to 2 days.
