A delightful and straightforward dish featuring tender chicken breasts in a rich and creamy mushroom sauce, perfect for busy weeknight dinners.

  • 4 boneless, skinless chicken breasts
  • 1 cup mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil and butter in a skillet over medium-high heat.
  2. Season the chicken breasts with salt and pepper, then add to the skillet. Cook until golden brown on both sides and cooked through, about 5-7 minutes per side. Remove from the skillet and set aside.
  3. Add sliced mushrooms to the same skillet and cook until softened, about 3-4 minutes.
  4. Add minced garlic and cook for an additional minute.
  5. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
  6. Stir in heavy cream and return to a simmer. Cook until the sauce thickens slightly, about 3-5 minutes.
  7. Return the chicken to the skillet, spooning sauce over the top, and heat through.
  8. Garnish with fresh parsley and serve over mashed potatoes, pasta, or with roasted vegetables.

Notes

Make sure not to overcrowd the skillet when cooking the chicken for a nice golden crust. Consider adding Italian seasoning or fresh herbs to enhance flavor.
