A comforting and hearty casserole featuring ground beef, potatoes, and melted cheese.

Ingredients

  • 1 pound ground beef
  • 4 medium potatoes, sliced
  • 2 cups mixed vegetables (frozen or fresh)
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup beef broth or water

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brown the ground beef with the chopped onion and minced garlic over medium heat until the beef is no longer pink. Drain excess fat.
  3. Add salt, pepper, and paprika to the beef mixture.
  4. Layer the sliced potatoes in a greased casserole dish, followed by the mixed vegetables, and then the beef mixture.
  5. Pour broth or water evenly over the layers.
  6. Top with shredded cheese.
  7. Cover the dish with aluminum foil and bake for 45 minutes.
  8. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and the potatoes are tender.
  9. Let it cool slightly before serving.

Notes

This casserole pairs well with a side salad or crusty bread. You can also sprinkle fresh herbs on top for added flavor.
