A creamy and hearty chicken chili that cooks slowly in a crockpot, perfect for any season.

Ingredients

  • 1 lb chicken breast
  • 8 oz cream cheese
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet ranch seasoning
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Place the chicken breast in the slow cooker.
  2. Add the cream cheese, black beans, corn, diced tomatoes, ranch seasoning, and chicken broth on top of the chicken.
  3. Stir to combine all the ingredients.
  4. Cover and cook on low for 360-480 minutes or on high for 180-240 minutes.
  5. Once the chicken is cooked, shred it in the slow cooker using two forks.
  6. Stir in the shredded cheddar cheese and season with salt and pepper to taste before serving.

Notes

For extra spice, add a chopped jalapeño or your favorite hot sauce. Adjust the amount of cream cheese for creaminess; more will make it richer. Serve with a side salad for a complete meal.
