This easy and flavorful crockpot chicken fajitas recipe is perfect for busy weeknights or casual gatherings. Minimal prep and rich flavors make it a one-pot wonder.

Ingredients

  • 2 lbs chicken breasts
  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Tortillas or bowls for serving

Instructions

  1. Place chicken breasts in the crockpot.
  2. Top with sliced bell pepper and onion.
  3. Pour the can of Rotel over the top.
  4. Sprinkle chili powder, cumin, salt, and pepper over everything.
  5. Cook on low for 360-480 minutes or high for 180-240 minutes until chicken is cooked through.
  6. Shred the chicken with two forks and mix everything together.
  7. Serve in tortillas or bowls with your favorite toppings.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stove or in the microwave until heated through.
