A comforting and creamy casserole made with fresh winter vegetables and a rich cheese sauce, perfect for chilly days.

Ingredients

  • 1 head cauliflower, chopped
  • 2 cups broccoli florets
  • 2 cups carrots, sliced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheese (cheddar or a blend)
  • Salt and pepper to taste
  • Breadcrumbs for topping (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Bring salted water to a boil and blanch the cauliflower, broccoli, and carrots until just tender, about 5 minutes. Drain and set aside.
  3. Melt butter in a medium saucepan over medium heat. Stir in flour and cook for 1-2 minutes until lightly golden.
  4. Whisk in milk gradually, cooking until the sauce thickens.
  5. Stir in cheese until melted, then season with salt and pepper.
  6. Combine the veggies and cheese sauce in a baking dish.
  7. Top with breadcrumbs for a crunchy topping if desired.
  8. Bake for 25-30 minutes until bubbly and golden.
  9. Serve warm and enjoy your comforting casserole!

Notes

Make sure to blanch the vegetables just enough to retain some crunch. You can use different cheeses like mozzarella or pepper jack for a unique taste.
