Creamy Tuscan Chicken Pasta

A delicious one-pan meal combining tender chicken, fresh spinach, and sun-dried tomatoes in a rich and creamy sauce, perfect for a weeknight dinner.

Ingredients

  • 1 lb boneless, skinless chicken breasts (thinly sliced)
  • 1 tbsp olive oil
  • 1 small yellow onion (finely chopped)
  • 4 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes in oil (drained and chopped)
  • 1/2 cup chicken broth
  • 1.5 cups heavy cream
  • 1 cup grated Parmesan cheese (plus more for serving)
  • 1 tsp Italian seasoning
  • 5 oz fresh spinach
  • 8 oz penne pasta (cooked according to package directions)
  • Salt and black pepper to taste

Instructions

  1. Season the chicken breasts with salt, pepper, and half of the Italian seasoning.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the chicken and cook for 4-5 minutes on each side until golden brown and cooked through.
  4. Remove the chicken and set it aside.
  5. In the same skillet, add the chopped onion.
  6. Cook for 2-3 minutes until it softens.
  7. Add the minced garlic and cook for another minute until fragrant.
  8. Pour in the chicken broth to deglaze the pan, scraping up any browned bits from the bottom.
  9. Stir in the heavy cream, grated Parmesan cheese, and the remaining Italian seasoning.
  10. Bring this mixture to a simmer and cook for 3-4 minutes, stirring occasionally, until the sauce thickens slightly.
  11. Add the chopped sun-dried tomatoes and fresh spinach to the skillet.
  12. Cook for 1-2 minutes until the spinach wilts into the sauce.
  13. Slice the cooked chicken and return it to the skillet.
  14. Add the cooked pasta and toss everything together until the pasta is well-coated in the creamy sauce.
  15. Season with additional salt and pepper if needed.
  16. Serve immediately, garnished with extra Parmesan cheese.

Notes

For a lighter version, you can use half-and-half instead of heavy cream.
