A comforting and creamy pasta dish with Italian sausage, perfect for cozy dinners.

  • 1 lb rigatoni pasta
  • 1 lb Italian sausage (hot or mild, casings removed)
  • 1 medium onion (finely chopped)
  • 4 cloves garlic (minced)
  • 28 oz crushed tomatoes (1 can)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup Parmesan cheese (freshly grated)
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (or to taste)
  • Salt and black pepper (to taste)
  • Fresh basil or parsley (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the rigatoni according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  2. While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Add the Italian sausage and cook, breaking it apart, until browned. Remove the sausage and set aside.
  3. In the same skillet, add chopped onion and cook until soft. Add minced garlic and red pepper flakes, cooking for one more minute until fragrant.
  4. Pour in chicken broth to deglaze the pan. Stir in crushed tomatoes and Italian seasoning. Let it simmer for 10 minutes.
  5. Reduce heat to low and stir in the heavy cream and Parmesan cheese until the sauce is smooth. Season with salt and pepper.
  6. Return the cooked sausage to the skillet along with the drained rigatoni. Toss to coat, adding reserved pasta water if needed to thin the sauce. Serve immediately, garnished with fresh basil and extra Parmesan.

Notes

For extra flavor, consider adding vegetables like spinach or mushrooms. Use freshly grated Parmesan for the best taste.
