A delicious and satisfying dish featuring tender chicken, hearty penne pasta, and a rich creamy sauce.

  • 1 lb (454g) Penne Rigate (Cooked al dente)
  • 1.5 lbs (680g) Chicken Breast (Cut into strips)
  • 2 tbsp (30ml) Olive Oil (For searing)
  • 2 cups (480ml) Heavy Cream (Room temperature)
  • 1 cup (100g) Parmesan Cheese (Freshly grated)
  • 2 cloves Garlic (Minced)
  • 1/4 cup (15g) Fresh Parsley (Finely chopped for garnish)
  • 2 tsp (5g) Coarse Black Pepper (To taste)

Instructions

  1. Cook the Pasta: Boil water in a large pot and add salt. Cook the penne rigate according to package instructions until al dente. Drain and set aside.
  2. Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken strips and season with salt and pepper. Cook until the chicken is golden brown and fully cooked, about 6-8 minutes. Remove and set aside.
  3. Prepare the Sauce: In the same skillet, add minced garlic and sauté for 1 minute. Pour in the heavy cream and bring to a gentle simmer. Gradually mix in the Parmesan cheese until melted and the sauce is smooth. Season with black pepper.
  4. Assemble: Add the cooked penne and seared chicken to the sauce. Toss everything together until well coated. Adjust seasoning if needed.

Notes

For a smoother sauce, use room temperature heavy cream. Add Italian herbs like basil or oregano for extra flavor.
