A delightful dish featuring chicken, creamy sauce, and soft gnocchi, perfect for busy weeknights or impressing guests.

  • 1.5 lbs Chicken Breast (cut into bite-sized chunks)
  • 16 oz Potato Gnocchi (shelf-stable or refrigerated)
  • 6 slices Bacon (cooked and crumbled)
  • 4 oz Cream Cheese (cubed)
  • 1 cup Heavy Cream
  • 1/2 cup Chicken Broth
  • 1.5 cups Yellow Cheddar Cheese (shredded)
  • 1 tbsp Ranch Seasoning (dry mix)
  • 1 tsp Dried Parsley (for garnish)
  • 2 tbsp Fresh Chives (finely chopped)

Instructions

  1. Start by cooking the bacon in a large skillet over medium heat until it’s crispy. Remove bacon and leave the drippings in the pan.
  2. Add the chicken chunks to the skillet and season with a little salt and pepper. Cook the chicken until it’s browned and cooked through, about 7-10 minutes.
  3. In the same skillet, add the cream cheese, heavy cream, and chicken broth. Stir until the cream cheese melts and the mixture is smooth.
  4. Add the gnocchi and let it cook in the sauce for about 3-5 minutes or until they are tender.
  5. Next, stir in the shredded cheddar cheese, ranch seasoning, and crumbled bacon. Mix everything well until the cheese is melted and the sauce is creamy.
  6. Garnish with chopped chives and dried parsley before serving.

Notes

Cut chicken evenly for even cooking; watch gnocchi carefully to prevent them from getting too soft. Adjust creaminess by adding more heavy cream or cheese if desired.
