A delightful one-pan meal that combines the comforting flavors of chicken pot pie with the convenience of a skillet dish.

Ingredients

  • 8 oz egg noodles
  • 1 lb chicken breast, diced
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Stir in mixed vegetables and cook for another 3-4 minutes.
  4. Add the egg noodles, cream of chicken soup, chicken broth, onion powder, and garlic powder.
  5. Stir well and bring to a simmer.
  6. Cover and cook for 10-12 minutes, or until the noodles are tender.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh parsley before serving.

Notes

For a healthier twist, use whole grain or gluten-free egg noodles. Leftovers can be stored in an airtight container for up to 3 days.
