A comforting bowl of coconut chicken brothy rice featuring tender chicken, rich coconut milk, and aromatic spices.

  • 1.5 lbs Chicken Breasts or Thighs (Cut into 1-inch chunks)
  • 2 tbsp Neutral Oil (For searing the chicken)
  • 1.5 cups Jasmine Rice
  • 2.25 cups Water
  • 1 can Full-Fat Coconut Milk (14oz)
  • 3 cups Chicken Bone Broth
  • 2 tbsp Fresh Ginger (Minced)
  • 2 tbsp Fresh Garlic (Minced)
  • 1 tsp Turmeric
  • 1 tsp Yellow Curry Powder
  • 2 tbsp Red Chili Oil (for garnish)
  • 3 Scallions (Chopped)
  • 1/2 cup Fresh Cilantro (Whole leaves)
  • 1 Lime (Cut into wedges)

Instructions

  1. Prepare the Components by heating the neutral oil in a large pot over medium heat. Add the chicken chunks and sear until they are golden brown. Remove them and set aside.
  2. In the same pot, add minced ginger and garlic, cooking until fragrant.
  3. Stir in the turmeric and yellow curry powder for about a minute to release their flavors.
  4. Add the jasmine rice to the pot and stir well, allowing it to absorb the spices.
  5. Pour in the water, chicken bone broth, and coconut milk. Bring everything to a gentle boil.
  6. Once boiling, reduce the heat and return the seared chicken to the pot. Simmer for about 20 minutes until the rice is fully cooked and the chicken is tender.

Notes

For extra flavor, marinate the chicken in garlic, ginger, and spices before cooking. Adjust the spice level by adding more or less red chili oil based on your preference.
