A warm and hearty Italian soup made with beans, pasta, and vegetables, perfect for chilly days.

Ingredients

  • 1 cup dry beans (cannellini or kidney beans)
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 cup small pasta (like ditalini)
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Rinse and soak the beans overnight, then cook until tender.
  2. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, then sauté until soft.
  3. Add garlic and cook for an additional minute.
  4. Stir in diced tomatoes, cooked beans, vegetable broth, Italian seasoning, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20-30 minutes.
  6. In the last 10 minutes of cooking, add the pasta and cook until al dente.
  7. Adjust seasonings and serve warm.

Notes

This soup pairs wonderfully with crusty bread or a fresh salad. Add grated Parmesan cheese on top for extra flavor.
